Fans of Olive Gardens will love this copycat recipe of their delicious shrimp scampi. You will be shocked at how it’s easy to prepare and enjoy it at home at a fraction of its price. The best thing is that it is a favorite to adults and children of all ages.

You will just need to toss butter, garlic and other seasoning together with pasta and asparagus. Here is how I do it;

Olive Garden Shrimp Scampi Recipe

If you want to cook shrimp scampi like that of Olive Garden, then you can use this recipe to help you get similar results. It's easy to make and only takes about 20 minutes including prep time.

Ingredients
  

  • 1 pound angel hair pasta orother light pasta of your choice
  • 1pound uncooked shrimp (peeled, tails removed, deveined and thawed)
  • 8tbsp. butter (divided)
  • 6cloves of garlic (minced)
  • ¼ tsp. red pepper flakes
  • 2cups of white wine
  • ½lemon (press the juice)
  • 2tbsp. heavy cream
  • 1cup fresh asparagus (cut them into 2-inch pieces)
  • 1cup diced cherry tomatoes
  • Pepperand salt to taste
  • Parmesanor Romano cheese for garnish

Instructions
 

Step1: Cooking the Shrimp

  • Boil salted water in a pot over high heat.  Meanwhile, heat 4 tbsp. of butter in a medium skillet.  Season the shrimp lightly with pepper and salt, add to the skillet and cook on medium heat.
  • Cookfor about 3-5 minutes while stirring occasionally until the shrimp turn pink.Remove from heat and keep them covered in a plate to maintain warmth.
  • Important to Note: Ensure not to overcook the shrimp. The key to juicy and perfect shrimp is to cook until they just turn pink on all sides. This happens fast, so monitor closely to avoid overcooking.

Step2: Cooking the pasta

  • Cook the pasta as per package instruction, usually 6-8 minutes. Drain them and reserve ½ cup of the pasta water and set aside.

Step 3: Prepare the sauce

  • I prepare my sauce while the pasta continues to cook. In the same skilled I cooked the shrimp in, I add 2 tbsp. olive oil, the red pepper flakes and minced garlic. Sauté for about 1 minute or until the rich fragrance saturates the atmosphere, stir in the wine and bring the mixture to boil, lower the heat and simmer for 6-8 minutes or until the wine reduces by half.
  • Add the lemon juice, asparagus and simmer for another 2 minutes. Season with pepper and salt to taste.
  • Important to Note: The thinner the pieces of the asparagus the better because you’ll cook for a short time before serving. For thicker pieces, consider blanching or steaming first before adding to the sauce.

Step 4: Add cream and butter

  • Add the 2 tbsp. of heavy cream and the remaining 4 tbsp. of butter to the sauce and stir to mix.

Step 5: Mix everything

  • Put back the shrimp I the skillet together with the diced tomatoes and prepared pasta.
  • Use tongs to toss the pasta, asparagus and shrimp in the sauce and add the reserved pasta water to evenly coat everything. Taste and adjust seasonings as desired.
  • Garnish with grated parmesan or Romano cheese and serve.
